National Baked Scallops Day!

Paleo style scallops!!

Ingredients:
1 lb of scallops
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cajun seasoning
1 teaspoon Old Bay Seasoning
1 teaspoon fresh parsley
1/2 cup bread crumbs (substituted)
4 tbsp butter

Instead of bread crumbs though I’ve found another acceptable substitute. Pecans. From my back yard. Crushed and powdered in my food processor. And it works.

Preheat the oven to 375 degrees. Place the scallops in a glass baking dish. Melt the butter in a saucepan and pour it over the scallops. Then sprinkle the mixture of crushed pecans, cajun seasoning, Old Bay, garlic and onion powder over the scallops trying to cover them a bit more evenly than I did (see photo).

Bake until the scallops are done. Fifteen to twenty for smaller scallops, a bit longer for larger ones.
