National Waffle Day!

~Snickerdoodle Waffles~

2 cups flour
1 tsp. salt
4 tsp. baking powder
2 TB sugar
2 eggs
1 1/2 cup milk warm
1/3 cup butter melted
1 tsp. vanilla
1 tsp. almond extract
Topping Ingredients below

Preheat waffle iron.
In a bowl mix flour, baking powder salt and sugar.
In a separate bowl beat 2 eggs. Add warm milk, 1/3 cup melted butter, vanilla and almond extract. Mix well and add to your dry ingredient bowl.
Add 1 tsp. cinnamon to your waffle mixture. Pour into waffle iron and cook.
While waffles are cooking melt 1/2 cup butter in a bowl. Also place 3/4 cup sugar and 1/4 cup cinnamon in pan (for the topping).
When waffles are done quickly dip in melted butter and then sprinkle on a tablespoon or two of the sugar/cinnamon mixture. *You can also use the spray on butter instead if you prefer.
Serve warm and ENJOY!


~Banana Nut Whole Wheat Waffles~
2 large eggs

2 cups whole wheat flour

4 teaspoon baking powder

1/4 teaspoon fine sea salt or table salt

1 3/4 cups milk (I love skim, but any kind would work)

1/2 cup canola oil or olive oil

1/2 teaspoon of vanilla extract

1 Tablespoon of honey

3 Bananas

1/2 cup of walnuts


Preheat your waffle maker to medium heat.

In a large bowl beat 2 eggs on high speed until frothy and bubbly (it takes about a minute)

Add your 2 cups of flour, 4 tsp baking powder and 1/4 tsp salt.

Pour in 1 3/4 cups milk, 1/2 cup olive oil, 1/2 tsp vanilla and 1 Tbsp honey. Whisk the mixture together until smooth.

Cook your waffles until done. It is best to place waffles on a wire rack instead of stacking them so they won’t get soggy.

Next add as many bananas and walnuts as you would like (I like a lot of walnuts). You can also add whipping cream and syrup.
